#cornfordayz. First we boil the corn, then sear it on the plancha. We smother it in chipotle mayo, roll it in our house made queso fresco (for which I will forever be grateful to a street vendor in Baja), sprinkle a little smokey sumptin sumptin on the top - throw some cori' on it and serve it with a wedge of lime - which you def need to squeeze over the top. I just love this dish so much.
Our big brother restaurant Barrafina Tapas Bar was famous for its croquetas, so this is just a 'mexicali' tribute. Instead of the traditional spanish jamon and manchego cheese filling, we scorch fresh corn on the plancha, pickle our own japalenos, and blend it with a manchego cheese béchamel. It's then coated in ground panko, fried till crisp and it sits on a green tabasco aioli, topped with grated manchego and yum, cheesy goodness. Its bloody hard to stop at one
Cheeseburger Spring Rolls
Based on a chimmichanga I had in southern cali', and an homage to my favourite Sydney Chef Dan Hong - we use a grass fed chuck mince, season it with 'erbs, and basically fill up a spring roll wrapper with meat, american burger cheese, onions caramelised with beer and pablo's pickles to boot - top it with american ketchup and mustard, more pickles and #WTF!!!
What we are famous for. On our Express Lunch you can choose any one of our seven tacos to finish your meal. Choices include our signature crispy fish taco - a spicy pulled chicken with lemongrass and chilli mayo - crisp pork belly with korean hot sauce - braised lamb shoulder with membrillo (another tribute to Barrafina Tapas bar) - crisp pumpkin with chipotle - hot plate mushrooms with chimichurri or the bulgogi beef cheeks with jalapeño mayo (which has a cult following). Chipotle Chicken Quesadilla
Old school chicken quesadilla with a twist. Think braised chicken, monterey jack, hot plate mushrooms and red onions folded between a 10 inch tortilla, then a kick ass chipotle and honey vinaigrette I picked up in San Javier in the Gulf of California, sumac yoghurt to cool you down, a sprinkle of cori' and boom - #heaven.
